Ingredients
- 2 oz. pork tenderloin sliced crosswise in 8 pieces
- 1 egg (If you are like Rocky, also break one of those bastards straight into your mouth)
- 2Tbs honey
- 1c finely chopped pecans (you can put whole pecans in a bag and smash the shit out of it)
- 2Tbs cooking oil
- 8 small buns or dinner rolls, split
Directions
With palm of hand,flatten pork slices to 1/4″ thickness. In shallow dish,whisk together egg and 1Tbs honey. In another shallow dish,combine chopped nuts,1tsp salt and 1/2tsp pepper. Dip pork in egg mixture then nut mixture,pressing to coat.
In 12-Inch Skillet,heat oil over med-high heat. Cook pork in hot oil 2 to 3 mins. a side or till golden brown and slightly pink in centers.
Place pork on buns or rolls and serve on Serving Platter. Serves 4 (two sliders each).
As for optional toppings, we have tried a Dijon Mustard or Amish Slaw (Recipe). We usually lean towards the Amish slaw. Such a good dinner and relatively simple to prepare.
