Ingredients

  • 4 large tomatoes, peeled and diced
  • 1 cucumber, peeled and diced
  • 1/2 sweet red pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 onion minced
  • 2 cloves garlic, minced
  • 1/4 cup parsley, minced
  • 1 Tbsp chives, minced
  • 1 tsp basil, minced
  • 1 Tbsp olive oil
  • 3 Tbsp lemon juice
  • 2 cups tomato juice
  • salt and pepper

Directions

  • Combine tomatoes, cucumber, peppers and onion, mixing well.
  • Puree half vegetable mixture with garlic, parsley, chives, basil, oil, and lemon juice in a food processor.
  • Combine puree with vegetable mixture and tomato juice in a stockpot.
  • Cover and refrigerate for at least 3 hours.
  • Salt and pepper to taste.
