Ingredients
- 4 large tomatoes, peeled and diced
- 1 cucumber, peeled and diced
- 1/2 sweet red pepper, diced
- 1/2 green bell pepper, diced
- 1/2 onion minced
- 2 cloves garlic, minced
- 1/4 cup parsley, minced
- 1 Tbsp chives, minced
- 1 tsp basil, minced
- 1 Tbsp olive oil
- 3 Tbsp lemon juice
- 2 cups tomato juice
- salt and pepper
Directions
- Combine tomatoes, cucumber, peppers and onion, mixing well.
- Puree half vegetable mixture with garlic, parsley, chives, basil, oil, and lemon juice in a food processor

- Combine puree with vegetable mixture and tomato juice in a stockpot
.
- Cover and refrigerate for at least 3 hours.
- Salt and pepper to taste.
