This Gnocchi, Broccoli and White Bean Casserole is ready in just 30 minutes and is perfect for a quick and easy vegetarian dinner that everyone will love! Plus it only has 5 ingredients so can’t be that tough to put together. You are not chopping much (basically only broccoli) and only have to open a few packages. If you can turn on an oven and mix a few things together, you can make this vegetarian dish. Fair warning, the taste is not something you probably have on a regular basis. But the predominant taste is pasta, cheese and pasta sauce so how can you go wrong with that? You can’t. Plus you can eat thin on a meatless Monday and feel good about yourself and how y9ou started the week out.

 



 

Ingredients:

4–5 cups broccoli florets
1 (16 oz) package gnocchi
1 (15 oz) can cannellini beans, drained and rinsed
1 (24 oz) jar tomato sauce
1 cup grated cheese, divided (your favorite kind)
Salt and black pepper, to taste

 

Directions:

Pre-heat oven to 400 degrees F. Bring a large pot of water to a boil. Add broccoli florets to the boiling water and let cook for about 2 minutes. Next, add the gnocchi and let cook until all the gnocchi has floated to the top, another 4-5 minutes.
Drain broccoli and gnocchi and add them back into the pot. Add in the cannelloni beans, tomato sauce and 3/4 cup of the cheese. Stir everything together and pour into a large baking dish. Spread out with a large spoon and evenly sprinkle the remaining 1/4 cup cheese on top.
Place baking dish in the oven and bake until bubbly and cheese is melted, about 15-20 minutes. Season with salt and pepper, to taste.
